On April 26 we planted potatoes in bags. You plant the sprouting potato in 2 inches of soil. Then as the potato pokes out of the the soil you cover all but the top leaves so these then turn to roots. this way you get more potato in theory then you would growing it as you normally would. We have covered our sprouts many times, and our plants are getting very big! Here are some photos of our recently covered potato plants
